Who's nuts about nuts?

I took unsalted unseasoned mixed nuts and tossed them around in the wok for 2 min.

Soy sauce 1 tbsp
Molasses 2 tbsp
Sesame seeds - shake
Brown sugar - 1/4 cup

Yummy!

You can do this with any kind of spices or flavours you like.

I also like a bit of oil with BBQ spice.

Dairy-free, soy-free icing

So my son has a birthday party to go to. That means I am taking out the gluten free cakes that I have pre-made and are stocked in the freezer for such occasions. I made some dairy-free- soy-free icing for the cake for him, but then saw that I had already iced his cake. OH well, we have extra icing. Now what could we do with it....

Earth balance margarine
Almond milk
1 tsp of sugar

Veggie dip

My mom would make this veggie dip that I LOVED. I have memories as a kid getting very excited knowing that today was the day she was going to make the dip. She put the dip in a pumpernickel bread bowl. At my house I make the same dip, no bread, just veggies and dairy free alternatives.

Instead of the sour cream and mayo, I use Tofutti sour cream and Vegannaise.  I still use the dry vegetable soup mix. Make sure you let it chill for 2 hours in the fridge.

When you have a good dip you can use it for:

Sandwich/wrap spread
Veggie dip
Dip for roasted veggies
Sauce for potato salad/coleslaw

Sushi rice balls - how fun!

If you haven't mastered the skill of vegan sushi yet, which I encourage, it's worth the effort. Then you can always make easy sushi rice balls. Kids love these too. They are a perfect size for their hands and they dip them in soy sauce or plum sauce.

Just make sure that you let the rice cool a bit, and that you wet your hands first before you form the balls or they will stick like crazy to your fingers.

What an odd dinner

 So this is what I ate last night. I had some leftover chickpea and lentil tomato based curry. Boiled potatoes in Earth Balance margarine and salt and pepper. With a stir-fry of some vegetables with Greek spice flavouring I know...what an odd dinner.

The chickpea and lentil dish tasted better to me last night then when I previously tasted it. Sometimes curries can be like that. The longer they sit, the more the flavors mesh together and taste even better.

The stir-fry was completely unplanned, and I just wanted to use up some veggies in the fridge that were in small portions. I also added in a tin of the baby corn. My kids love them, so I knew that the dish would be a hit with them. I on the other hand pick the corn out.

So, in this dish is the baby corn, peppers, mushrooms, tons of pine nuts (yum), Napa cabbage, olive oil, and Greek seasoning that I buy in bulk from Costco.

The potatoes below of course are a hit, a classic, and supper easy and cheap to cook with. 

My kids don't like lentils at all, if anyone has a kid friendly recipe for lentils do share. Until then, they ate taco beef with their potatoes and baby corn. (The listing of the farm where we get our local beef - grass fed, naturally raised, is on my website)

Some exciting news to share, our dishwasher is now working again. We have been without a dishwasher for 7 days and last night it just magically started working again. What a system to wash all of the dishes. I cook a lot! Everyone in my family has hollow legs, so I am so happy it's working again. For those of you who don't use a dishwasher by choice or by simply not having one, my hat goes off to you. Pat yourself on the back. :)

Who wants a snack?

Air popped popcorn is a great snack. We often associate it with TV or movies, but we can eat popcorn for any snack. With gluten free snack products estimated at 240% more expensive than it's wheat counterpart popcorn is just looking better and better.

I like to melt Earth Balance - diary free, soy free margarine on top with a bit of salt. My husband likes melted peanut butter to dip his popcorn in and food yeast sprinkled on top is also an option.

Some old ideas...some new...


So above is curry cauliflower with onions. I love the smell of friend onions.  My daughter used to inhale this stuff when she was 1 yrs old. I used to carry it around with me when we went out. She still has a great appetite. 


This is a chickpea and lentil tomato based Indian dish.  It was yummy!



This is my safe food. I figure if no one liked the food I made for dinner they would at least eat the potatoes. My children also had leftover roasted chicken from the weekend.

Below was my experiment. The attempt was chickpea pancake type bread. I read the ingredients and then made it vegan. The result is that it fell apart. So I re-grouped. I put in 1 egg in it, and fried it.


The result are these.  My thought was that I would make something similar to home made onion rings, but with the balls. Which makes me want to attempt gluten free onion rings. Let me know if you are interested in me trying this out. 


I think tomorrow I will go back to basics and go with a meal that is a solid guarantee sell in my family. Two nights of experimenting should be rewarded with a favourite dish.

Tonight's dinner for Chinese New Year

So here are some photo's of dinner for Chinese New Year. The Year of the Dragon. I can't say that everything I made was a success. The best part was the noodles soup. But.... I did try!


At the end I added my favourite seaweed snack.  These things are so good.


I added these cooked gluten free noodles to the soup once my stock was done and we were ready to eat. I love potato starch noodles, they don't turn to mush.

 These spring rolls, supposed to be pot stickers, but I got creative and wondered what I could make. My son appreciated my creativity...but he was the only one. These were before they were put on broil in the oven.
 This was the filling pre cooked, with some oil, ginger, garlic, soy sauce -gluten free.

 As I said, the best part was really the noodles soup. (Carrots, onions, celery, vegetable stock, starch noodles, sea weed, little bit of sugar and salt)


We also had rice with various dipping sauces. Having said all of that my husband is out currently with a friend at Boston Pizza. We have different tastes in food. Enough said.

aaaahhhhhhh!

So I was cooking last night and I was using up the soy cheese that we have. My husband and daughter have adapted to vegan cheese and I wanted to get rid of the soy cheese in our house. (My son cannot digest soy cheese, and soy cheese has cow protein in it.)

I grated the cheese and left it on the counter. I left for just a minute and came back to see my son scarfing down the soy cheese. AAAHH!

"Tyler! That is soy cheese!"

He freezes and slowly puts it back on the bamboo cutting board. He looks at me with a worried expression. I give him a hug and look to examine how much of it he has eaten. I figure 2/3 4year old handfuls of soy cheese.

Our evening carries on uneventful until bedtime. He is now flopping around like a fish out of water and he complained that his tummy hurt. wow, I think...from only a bit of soy cheese.

It's hard to have separate food items in a house when someone has an allergy or food intolerance. My son and I cannot digest wheat. All of our food staples are 90% gluten free. My husband and daughter still like wheat bread. My daughter gets the occasional wheat treat in her lunch at school. But now we are done with the soy cheese. One less thing to keep track of in the house.

I am sure I am not alone in the experiences of running a kitchen in military fashion, I guess I need to add security.

How to: for gluten free noodles

For those who are new to gluten free noodles there are some frustrating cooking experiences I hope to spare you from. There are two types of gluten free noodles in my mind. The Asian noodles, and the Italian style noodles.

Asian noodles are in all different widths, typically thin, but always long. These noodles are soaked in cold water for at least an hour or could be soaked all day while you are at work.  These are typically tossed in a wok or noodle bowl for just a couple of minutes before being served.





Italian style noodles are more like lasagna noodles, macaroni, fettuccine, spaghetti, etc.  These need to be cooked in boiling water and can become tricky for a first timer.


So here's the scoop on rice noodles. You don't want to cook them until they are mushy, which can happen. You want to test them when they look soft to you and if they are chewy they have about 1 to 2 min left in the water and your done.

You need to rinse them really well with hot water.  I closed my sink up so that you could see the colour of the water when you drain them and wash them out.


When they are cooking in the pot you may think you boiling them in milk. Don't worry, that's a good sign. :)

It takes cooking with them a couple of times to get really comfortable with it. At least it did for me.

Last night I got my easy meal with little clean up.  I made spaghetti and we all ate pretty much the same thing. I took a big container of Ragu original spaghetti sauce and added some leftover veggies from last night. I also added garlic, bay leaves, oregano, parsley, basil, and ketchup. The ketchup brings in the sugar and the salt and makes it less acidic and a bit sweeter. I only add maybe 3 tbsp.


I added some leftover meat for the kids, and David had the leftover veggie meat to his sauce and I just opted for some more veggies.



Now we all have leftovers for lunch.
